Turkey Thawing Calculator
Enter the turkey's weight and the day and time you will start cooking to see when to take it out of the freezer, by refrigerator or cold water.

How to use the Turkey Thawing Calculator
- Enter the Turkey weight and choose pounds or kilograms. Use the weight printed on the package.
- Enter the Date you will start cooking as year-month-day, for example 2026-11-26.
- Enter the Time you will start cooking in 24-hour form, for example 10:00. This is when the turkey must be fully thawed.
- Read Refrigerator thawing time. It is a range: the short end uses 5 pounds per 24 hours and the long end uses 4 pounds per 24 hours.
- Read Start in the refrigerator no later than. It is based on the long end, so the turkey is thawed in time.
- For the faster method, read Cold water thawing time and Start cold water thawing at. The water must be changed every 30 minutes, and the tool shows how many changes to expect.
- Check any warning, then open How it was calculated to see each step with your numbers. If the start time has already passed, choose cold water thawing or move the cooking time.
The example buttons load samples. Reset restores the defaults, Copy link stores your inputs in the page address, Copy result copies the result lines, and Print / save as PDF prints the inputs and steps with the date. The table lists times for 8, 12, 16, 20 and 24 pound turkeys.
How long does it take to thaw a turkey in the refrigerator?
Allow about 24 hours for every 4 to 5 pounds, with the refrigerator at 40 °F or below. A 16 pound turkey takes 76.8 hours (16 ÷ 5 × 24) to 96 hours (16 ÷ 4 × 24), which is 3.2 to 4 days. To cook at 10:00 am on Thursday 26 November 2026, start by Sunday 22 November at 10:00 am to allow the full 4 days. The 2003 FSIS leaflet used 24 hours per 5 pounds and a table of 1 to 2 days for 8 to 12 pounds, up to 4 to 5 days for 20 to 24 pounds. The tool shows both ends and plans from the longer one.
How long does it take to thaw a turkey in cold water?
Allow about 30 minutes per pound. The turkey must be in leak-proof packaging, submerged in cold water, with the water changed every 30 minutes until it is thawed. A 16 pound turkey takes 8 hours and about 16 water changes. FSIS says a turkey thawed this way must be cooked immediately, because the thaw was not temperature controlled. For a 10:00 am start the tool says to begin at 2:00 am, which shows why most people choose the refrigerator.
Can I cook a turkey that is still frozen?
FSIS says it is safe to cook an unstuffed frozen turkey, and the cooking will take at least 50 percent longer than for a fully thawed one. Turkeys sold stuffed and frozen with a USDA or state mark of inspection should not be thawed before cooking; follow the package directions.
Why not thaw it on the counter?
A frozen package left on the counter for more than 2 hours is not safe. The outer layer enters the danger zone between 40 and 140 °F, where bacteria multiply quickly, even though the center is still frozen. The three safe ways are the refrigerator, cold water and the microwave. For the microwave, follow the oven maker’s instructions and cook the turkey immediately afterwards. The tool does not time microwave thawing.
Turkey thawing time chart for Thanksgiving 2026
US Thanksgiving is Thursday 26 November 2026. The chart shows the refrigerator time for each turkey weight (24 hours per 5 pounds to 24 hours per 4 pounds, at 40 °F or below), the latest day and time to move a frozen turkey into the refrigerator if you start cooking at 10:00 am on Thanksgiving Day, and the cold water time (30 minutes per pound). The tool gives the same answers for any other weight, date and time.
| Turkey weight | Refrigerator thawing | Latest refrigerator start | Cold water thawing |
|---|---|---|---|
| 8 lb | 1.6 to 2 days | Tue 24 Nov, 10:00 am | 4 hours |
| 10 lb | 2 to 2.5 days | Mon 23 Nov, 10:00 pm | 5 hours |
| 12 lb | 2.4 to 3 days | Mon 23 Nov, 10:00 am | 6 hours |
| 14 lb | 2.8 to 3.5 days | Sun 22 Nov, 10:00 pm | 7 hours |
| 16 lb | 3.2 to 4 days | Sun 22 Nov, 10:00 am | 8 hours |
| 18 lb | 3.6 to 4.5 days | Sat 21 Nov, 10:00 pm | 9 hours |
| 20 lb | 4 to 5 days | Sat 21 Nov, 10:00 am | 10 hours |
| 22 lb | 4.4 to 5.5 days | Fri 20 Nov, 10:00 pm | 11 hours |
| 24 lb | 4.8 to 6 days | Fri 20 Nov, 10:00 am | 12 hours |
The latest start uses the slow end of the range, so the turkey is fully thawed by 10:00 am on Thursday. A turkey thawed in the refrigerator can wait a day or two longer before cooking, while one thawed in cold water must be cooked straight away. If your cooking time is later in the day, move every start time later by the same number of hours.

Frequently asked questions
Is the calculator free, and is anything I type uploaded?
Yes, it is free. It runs in your browser, needs no sign-up, and nothing you type is uploaded.
Can I use the results in commercial work?
Yes. Results, steps and printouts can be used in any work, including a kitchen prep sheet, and no attribution is needed. They are planning estimates; follow food safety rules that apply to you.
How many days does it take to thaw a 20 pound turkey?
In the refrigerator, 20 pounds takes 4 to 5 days (20 ÷ 5 = 4 days to 20 ÷ 4 = 5 days). In cold water it takes about 10 hours. For other weights, such as 12, 14 or 15 pounds, read the chart above or type the weight into the calculator.
Should I plan for the 4 pound or the 5 pound rate?
Plan for the slower 4 pounds per 24 hours if you want to be sure the turkey is fully thawed in time, which is why the tool bases the latest start time on the long end of the range.
Does the calculator work for a turkey breast or other poultry?
It is built on the FSIS rules for whole turkeys. A turkey breast or a chicken is smaller and may thaw sooner, so treat the answer as an upper limit and check the package. The tool warns for weights outside 4 to 24 pounds.
How many times do I change the water?
Every 30 minutes. For a 16 pound turkey that is about 16 changes over 8 hours. If that is too many, thaw in the refrigerator instead.
When should I take the turkey out of the freezer for Thanksgiving?
Move it into the refrigerator on the day shown in the chart above: for a 12 pound turkey that is Monday 23 November, for a 16 pound turkey Sunday 22 November and for a 20 pound turkey Saturday 21 November, all by 10:00 am (or earlier in the day for a later meal). Type your own weight and cooking time into the calculator for the exact start time.
What if I started thawing too late?
Switch to cold water thawing: keep the turkey in leak-proof packaging, fully submerged in cold water, change the water every 30 minutes and cook it as soon as it is thawed. Never thaw it on the counter. A frozen unstuffed turkey can also be cooked from frozen, which takes at least 50 percent longer.
